Happy Sunday everyone! How has the weekend been so far? Anything exciting happening? Do tell! Today I will be sharing my Paella recipe which is currently on my list of favourite meals. Great to cook for dinner and impress your friends with your cooking skills. Start writing down the recipe:
1 chicken breast with skin, cut up into pieces
Freshly ground black pepper
Flour for dusting
1 onion, finely chopped
2 gloves garlic, finely chopped
2 liters chicken stock, hot
2 large pinches saffron
1 teaspoon of paprika
250 g paella rice
1 small bunch parsley leaves, chopped
2 handfuls fresh or frozen peas, I used frozen
10 Prawns (fresh or frozen)
Mussels, I used frozen ones
Season the chicken pieces and dust them with flour. Heat a little olive oil in a large deep pan and fry the chicken until golden brown on both sides. In the meantime preheat the over to
190 C. Place the
pieces on a baking tray and into the over for 30 minutes.
Put the pan back on the heat, add the onion and garlic and cook until soft. Meanwhile infuse half the hot chicken stock with the saffron. Add the paprika, rice and infuse stock and leave to cook on a medium heat, stirring from time to time.
After 20 minutes the rice should be nearly cooked but keep stirring from time to time. At this point, pour in the rest of the stock together with peas, prawns and mussels. Cover with a lid and cook for another 10 minutes. Finally, add the chicken and serve with chopped parsley and lemon.
